Chicken Cordon Bleu Casserole

Ok, tried the whole Chicken Cordon Bleu casserole thing that I have seen several recipes on.
So good!

Casserole:
1 whole Cooked Chicken, Bones Removed, Meat Diced Or Shredded (rotisserie Chicken was recommended and it worked beautifully.  You want about 5-6 cups of chicken)
½ pounds thinly sliced Deli-style Ham, Rough Chopped  (I used Pit Ham)
¼ pounds sliced baby swiss cheese (we had longhorn and it worked well)
Sauce:
4 T butter
4 T gluten free flour (I used Better Batter)
3-¼ cups Milk (I Used Whole Milk)
2 T lemon juice
1 T dijon mustard
1-½ tsp salt
½ tsp smoked paprika
¼ tsp white pepper
Topping:
6 T butter
1-½ C Ian's Gluten Free Panko Bread Crumbs
¾ tsp seasoned salt
1-½ tsp dired parsley

Directions:

1) Preheat oven to 350 F. Butter a 9 x 13 inch baking dish.
2) Put cooked shredded or diced chicken on the bottom of the baking dish. Rough chop the ham and scatter it over the top of the chicken. Lay the Swiss cheese on top of the ham.
3) Melt the butter in a large sauce pot over medium heat. When butter is melted, quickly stir in the flour to form a smooth roux. Do not brown! Once the roux is smooth and bubbly, slowly pour in the cold milk while stirring briskly to make a smooth sauce. Cook over medium heat, stirring constantly until the sauce thickens. Stir in the lemon juice, Dijon mustard, salt, smoked paprika and white pepper. Bring sauce just back to a low boil and turn off heat. Pour sauce evenly over the casserole.
For the topping:
4) Melt the butter.  If using the microwave, heat it for 30 seconds at a time and stop once it’s melted. Take the bowl out of the microwave and stir in the panko bread crumbs, seasoning salt and crushed dried parsley. Sprinkle over the top of the casserole.
5) Bake casserole uncovered for 45 minutes until hot and bubbly throughout and topping has turned a light golden brown. Remove from oven and allow to cool before serving.

Gluten free gnocchi Mac and cheese

Gnocchi mac & cheese

Ingredients:

1 pound purchased or homemade gluten free gnocchi  (I used Conte's)
2 Tablespoons butter
2 teaspoons garlic, finely chopped
1 Tablespoon all-purpose gluten free flour  (I used Better Batter)
3/4 cup milk
1 teaspoon Dijon mustard
1/4 cup shredded Gruyere cheese
1/4 cup shredded fontina cheese
Salt and white pepper to taste
1/3 cup shredded Parmigiano-Reggiano
Gluten free breadcrumbs (I used Ian's Italian Panko flakes)

Directions:

Preheat oven to 375. Prepare gnocchi according to package directions. Drain and place gnocchi in a single-layer in a 1-1/2 quart shallow baking dish that has been sprayed with nonstick spray.

Melt butter in a medium saucepan over medium heat. Stir in garlic and cook until fragrant, about 30 seconds. Whisk in flour until it thickens and bubbles, then whisk in milk and Dijon. Continue to whisk mixture and cook until slightly thickened, about 3-5 minutes.

Pour cheese mixture over gnocchi and then top with breadcrumbs and additional Parmesean cheese to amount you would like.  I wanted  a thick and crusty top so I went gung ho.

Bake for about 20 mins or until top is golden brown and cheese sauce is bubbling underneath (it will come up the sides).

*note- I rarely have had all three of the cheeses this calls for, so I wing it.*

Apple Crisp

6-8 apples, sliced

1 C Better Batter Flour

1 C Sugar

Liberal amount of cinnamon or Pumpkin Pie seasoning

1 tsp. baking powder

3/4 tsp. salt

1 Large Egg

1/2 C melted butter

 

Mix dry ingredients together, add egg to make crumbles.  Mix with hand, you can really squish it in this way.  Spread over the apples, then pour melted butter over top.  Top with additional cinnamon or pumpkin pie seasoning.   7 1/2 X 12 pan or larger.   Bake for 40 mins at 375 degrees.

New things

So, I have been wanting to try the soft pretzel recipe out of Nicole Hunn's , Gluten Free on a Shoestring.   The first time, the dough did not rise, and I thought it was because of the temperature of the water.  Not having a thermometer, I just judged the temp based on how it felt in relation to my skin.  I threw that dough out.   I got a thermometer, and measured everything and put it in the food processor, with the correct blade, and I think it may have risen a little. They didn't' roll out as they should and the texture seemed way off.   But I decided instead of scrapping this one, I would bake them out anyhow.   Flavor wise, they weren't bad.   I believe though, the issue with the rise is that I use the Splenda sugar blend, which I read was still good for yeast, instead of regular brown sugar.   I think I will give this a third try and use real brown sugar and if it doesn't rise then, then I am not meant to conquer this recipe.  My goal is to get the dough to rise correctly so I can convert it into pretzel bites and make a cheese sauce and have my own homemade pretzel bites :-)
My mother has bought me a box of a Chia Chocolate Chip Cookie mix to try.   Now, I prefer to make my own, but I wanted to give it a shot.  While they weren't bad, I wouldn't be rushing back to buy the mix.   Just prefer the good old fashioned homemade chocolate chip cookies.  
I am looking forward to trying the family Pizzelle recipe with Better Batter.  I think it will be nice to have some again.  I miss certain family favorites and looking to convert all to gluten free that I can.  Biscotti are next!!
Next week a few girls from work and I that are all Gluten Challenged are ordering out from Wild Tomato for lunch.  I am excited.  I am hoping to get the Mushroom-o-Rama pizza I swear I ordered Friday, but got a regular instead?  Also that same day, a few girls from work and I are having drinks at Flinchy's which has gluten free options.  I am excited.  
Ken and I are also trying to plan a vacation with my parents, as we all need a get away after all that has happened in the family the past two years and my parents really haven't had a real vacation in ages.   I think we are finally heading back to New England.   woo hoo!!!    Ken and I have been wanting to go back there for a few years now and I am glad to be able to get back up there in the fall.

Chocolate chip cookies

So on Pinterest I started following Nicole Hunn, and her blog http://glutenfreeonashoestring.com/.  I even purchased her book through Amazon.   She promotes a product I praised before, Better Batter, and it's in a lot of her recipe's.  I followed her chocolate chip cookie recipe today, to see if I could prevent the very loose and crumbly , yet tasty cookies from last time.  And you know what?  It worked perfectly.  They are delicious and not falling apart.  Before they were spreading out very thin and just didn't hold together very well.  Incidentally, the crumble were excellent on ice cream, just sayin....
So I highly recommend following her and her recipes.  She really has been doing the gluten free for a while and has done a lot of the experimentation and documentation that makes it easier for us newbies.   Hopefully I will feel brave enough to try one of her bread recipe's, after I am done savoring the bread I got from Betsy's Bakery.  That Raisin Cinnamon bread is just MMM MMMMMMM Good!
